Cup: The washed Sidamo is a bright and refined coffee with a clean and silky mouthfeel. It showcases lively citrus and lemon notes, complemented by delicate jasmine florals. The acidity is medium to high, offering a crisp and vibrant character that enhances the overall clarity. Finally, the finish is fruity and floral, leaving a lingering, elegant aftertaste.
Guji is a province in the southern part of Ethiopia, with the city of Awasa its capital as of 1978. Almost all of these coffees are grown at elevations between 1600-2200 meters above sea level. Generally, farmers harvest coffees in Guji between October and February. Subsequently, the shipping period commences from April (at the earliest) through to about September each year. Farmers grow this coffee in the Oromia region, one of Ethiopia’s largest specialty coffee-growing producers. Specifically, the farm is located in Shakisso (Guji zone), which is in the Southern and less-known part of Oromia.
The landscape is characterized by sharp and rugged hills, ridges, plateaus, valleys and flats creating a stunningly dramatic setting. The regions’ volcanic soil bursts with nutrients, creating a deep red and brown top-layer of soil. Moreover, the regions high altitude and dry weather allow for the cherries to develop very slowly.
Harvesting and Initial Processing
Workers carefully harvest the ripe cherries, nurtured under the African sun. They swiftly transport them to a local washing station. At the bustling washing station, meticulous sorting ensures only the finest cherries proceed.
Fermentation and Washing
At the farms’ washing station, workers pulp the coffee with an Agared machine (a pulper that has no mucilage remover). Depending on the climate, the coffee beans ferment for about 35-48 hours in fermentation tanks. After fermentation, the coffee is then washed.
Drying and Storage
Workers then dry the washed coffee in parchment for 9-15 days on elevated drying beds. Selected coffee parchment begin their transformative journey on raised drying beds, strategically positioned to maximize the region’s optimal conditions. Over 9-15 days, the warm, dry air of the Ethiopian highlands gently guides the cherries as they transition into exquisite coffee beans. Throughout the meticulous drying process, workers attentively turn each coffee parchment to ensure even drying and preserve delicate flavors. Once the moisture content drops below 12 percent, indicating their readiness, workers meticulously store the beans in a local warehouse, poised for distribution to coffee aficionados worldwide.
