The Conventional Way: How Others Roast Coffee
Many traditional coffee roasters use hot drums, often made of cast iron or worse, cheap and rusty steel. These drums are frequently heated directly by fire, scorching the beans as they make contact with the red-hot surface. Imagine layers of burnt coffee clinging to these rusty surfaces, contaminating each new batch of beans. This can result in bitter, metallic flavors in your coffee, and even make the beans appear darker than they actually are.
